Breakfast Quinoa

Quinoa is a great breakfast food. Many people use it strictly for dinner and lunch options, but it’s a fantastic protein packed choice to replace cereal or oatmeal for breakfast. I’ve been eating it mixed in with yogurt and sometimes fruit for the past little while, but this week I thought I’d spice things up a bit. This is definitely my new favourite way to eat quinoa, hands down. You can prep it the night before and heat it up in the morning on the stove to save time.

Recipe:

Ingredients

1/3 cup quinoa
2/3 cup almond milk
1 teaspoon vanilla extract
Toppings of your choice – I used sliced strawberries, frozen blueberries, currants, pumpkin seeds and sunflower seeds
1/4 teaspoon cinnamon

Directions

1. Combine quinoa with almond milk and vanilla in a pot on the stove.

2. Bring to a boil, then reduce heat to low and simmer for 10 to 12 minutes, or until the quinoa has absorbed most of the liquid. The quinoa will tend to stick to the pot a little bit more cooking it this way than it would if it were being cooked in water, so be sure to stir often to avoid sticking. 

3. Add any frozen fruits or berries you are using to the quinoa while still on the stove. Stir until frozen additions have thawed. 

4. Remove pot from heat. Move quinoa to a bowl and add your toppings. Sprinkle with cinnamon.
